- 2 cups of cooked wild rice
- ¾ cup pomegranate arils
- ½ a raw jicama, roughly chopped
- ¼ cup green onions, finely chopped
- 1 tsp. lime juice
- 1/8 tsp. chili powder
- salt & pepper, to taste
Stir the wild rice, lime juice, and spices together. Add the jicama & green onions. Gently stir in the pomegranate arils last. Store in the refrigerator.
