Pudding Obsessions
This delectable, summery pudding is very easy to make. It is also an easy recipe to adjust for your own palette. Yields 2-3 servings.
- 1 ripe avocado
- 1 ripe and flavorful mango (this is important!)
- juice of 1 lime or 1 lemon
- juice of 1 orange
Puree all ingredients in a powerful blender until the mixture is a thick and homogeneous. Garnish with fresh mint (pictured) or slices of citrus.

Fun recipe Katie! I use to live in Brazil when I was a teen and they use to find all kinds of clever ways to make avocados in desserts and drinks. It was awesome. Your pudding reminded me of that.:-)
Yum, that's a great recipe! I love the fact that avocado can be used to make so many different dishes, dips, etc. It's really versatile and of course, delicious.

Yum! I sprinkle avocado halves with a tiny bit of sugar and lime juice but I love that you use the mango for sweetness. I'll give this a try.
